Spiced Ox & Palm Corned Beef on Hummus

Description

A popular dish in the Middle East, spiced corned beef on hummus is both delicious and easy to prepare. It also goes well with fresh green salad and is an excellent snack for the whole family.

Directions

Hummus:

  1. Add chickpeas (rinsed and drained), tahini, garlic cloves, lemon juice, water, salt, and black pepper to a food processor.
  2. Puree until smooth and add seasoning if needed.
  3. Store hummus in refrigerator.

For the Ox & Palm Corned Beef:

  1. Add corned beef to a large skillet and mix with onion, cumin, garlic, coriander, dried oregano, cayenne pepper, black pepper and salt.
  2. Sauté evenly and stir in the beef stock.
  3. Bring the hummus to room temperature, scoop and level on a plate.
  4. Add spiced corned beef mix to the center, garnish with parsley and serve.
