Ox & Palm Corned Beef Shakshuka

Description

An Arabic fare commonly served during festive seasons, corned beef shakshuka brings together meats, eggs, vegetables and a variety of spices for a flavorful yet nutritious meal.

  1. Preheat oven to 375 F.
  2. Add EVOO to heated pan, add ground corned beef, crumble and cook evenly.
  3. Add onions, peppers, seeds, spices and garlic to the corned beef and stir.
  4. Puree a can of chipotle in adobo, and add 2 tablespoons to pan.
  5. Add tomatoes, feta and stir.
  6. Form 5 to 6 nests in meat sauce and drop eggs into them.
  7. Transfer pan to oven for about 10 minutes till eggs set.
  8. Garnish eggs with cilantro leaves and scallions and serve.
